I am rather becoming one lockdown chef during these difficult times at home. I was one who never used to go inside the kitchen unless for eating, but now it's changed. When difficult times arises the real hero inside us starts to reveal the real talent hidden inside one's soul and mind.
It was a special day and I wanted to try something special so I made up my mind to try making the delicious Grilled Chicken with coconut milk in a banana leaf especially inspired by the great Chef Pillai. This was the trending dish on social media so I didn't waste my time watching it rather started making it at home.
Actually, this dish was good to prepare with fish but as of now its lockdown so it's not available so I decided to try it with some chicken.
First, we have to marinate chicken pieces with the following ingredients:
Ginger Garlic Paste
Chilly Powder
Turmeric
Salt
Pepper ( for taste )
Sliced Lemon Juice
Now after mixing the chicken with these ingredients as masala, we have to keep the chicken for rest at least half an hour until it gets properly marinated. Now we have to a frying pan and add some oil in it and thus we have to put the banana leaf inside the pan and again add some more oil onto the leaf, this is done just to avoid any sticking situation.
Now take the marinated chicken pieces and add this into the pan and now we have to add the main ingredient that is the
"Coconut Milk". We have to pour the coconut milk slowly on top and sides of the chicken pieces and thus add some more salt, pepper, and curry leaves on top of the chicken.
Try cooking in a low flame and now we have to close it with a lid. If it was fish it could have taken only 5 mins to get cooked one side but as its chicken, it might take much time. When the coconut milk gets completely dried it means that the chicken is properly cooked on one side.
Its time to roll the other side of the chicken so we have to just turn the chicken aside in the pan and again add some more coconut milk onto it and also add some salt, pepper, and curry leaves. Curry leaves are just for a nice flavor and also it's totally healthy to eat.
Now, wait for some time until the coconut milk gets dried completely. After it gets dried a nice smell comes out of the pan once opened, so our dish is ready to serve. The Chef Pillai special Chicken Grilled in Banana leaf with Coconut Milk. As it's cooked in banana leaf no need to worry about being spoiled as it adds an extra flavor to the chicken.
